As its name explains itself, Pyeongyang naengmyeon is a naengmyeon mainly enjoyed in Pyongyang. Dongchimi (radish water kimchi) is mixed with meat broth to make buckwheat noodles. The taste of Pyeongyang naengmyeon varies from restaurant to restaurant, but they all share in common that it’s seasoned lightly to bring out the true flavors of each ingredient. Here, buckwheat noodles are handmade at the restaurant to maximize the flavor of buckwheat. The restaurant also serves jeyuk muchim, the restaurant’s version of jeyuk bokkeum (spicy stir-friend pork) with other added ingredients like bean sprouts and noodles.
